Today, I baked a quickie focaccia (ready in about 75 minutes) and a strawberry cake for afters.

I'm trying to do low carb, so have just ordered some almond flour (which is outrageously expensive in the UK, Coconut is cheaper). If anyone has any recipes they think are real winners for the Almond then I'd appreciate it, especially simple ones. I've looked at some but they often incorporate all kinds of bits which you can't pick up in the supermarket, well you can't here anyway, it has to be specialist providers.

::deep breath:: Don't do low carb. The whole keto diet thing is ridiculously in vogue here, until enough people get on it that they find out it causes all sorts of problems, and of course when you fall off the wagon (which is inevitable with a diet like that) you gain back all the weight plus some. (I know I'm knee-jerking here, so if you're not doing keto or any other extreme diet like that, please ignore this for the rant it is)

Now, if you're just trying to lower your carbs to a reasonable amount that's one thing, but as my friend who's a dietitian said "Any diet where bacon is good for you but strawberries are bad is full of crap."

^We have (had?) a fad dieter at our office. This is how it went for him:

1. Coworker gets on fad diet.
2. Coworker loses weight.
3. Coworker gets frustrated by restricted diet.
4. Coworker gets off fad diet.
5. Coworker pigs out.
6. Coworker weighs more than prior to fad diet.
7. Coworker repeats this for the past 6 or 7 years.
8. Eventually coworker is 5'8" and roughly 340 lbs.
9. Coworker blows out knees playing softball.
10. Doctor tells coworker he's not a candidate for knee surgery at that weight, and probably isn't going to live long either.
11. Coworker has gastric bypass surgery.
12. Coworker has lost 100 lbs in roughly 8 months.

My friend is buying a sourdough starter, and she said she wants to give me half, partially as insurance so if hers dies, I could give her some of mine. I was looking up stuff about how to care for a sourdough starter online, and it looks...more time-consuming and complicated than I’d hoped.

Has anyone here cared for a starter and wants to share their experience? Just feeding it seems OK, but it looks like I’ll have to plan like 2 days in advance if I want to actually make bread with it. I love sourdough bread, but I’m not good at planning ahead.

I suppose I’ll have to name it. For some reason Nigel seems like a good name for a sourdough starter to me.

I'm not doing Atkins or anything, I love my fruit and veg too much for that, but processed carbs (although pulses and legumes are also a bit of a problem, not rice though) aren't sitting well with me and I have found I feel better and more energised if I cut them out. But I haven't tried alternatives, so I thought I give the Almond stuff a whirl.

Ah that's reasonable! It seems that too many people are in the carbs=evil while discounting that there's a BIG difference in how your body interacts with processed carbs vs. simple carbs.

I am also cutting processed foods and watching the types of carbs for DH. I am probably a candidate for insulin resistance so would benefit from this as well.

CFNY, I also have a co-worker that resembles the pattern you listed minus the surgery. I know several people who have had barriatric surgery with mixed results.

So I’ve got the sourdough starter, and I put it in the fridge so I don’t have to feed it as often. My husband has dubbed it “The Walking Bread” (my friend has christened hers Judge Bread). I have instructions on how to feed it, so I guess I just have to follow the instructions and hope it doesn’t die. And also figure out what to bake with it. I’ll post here if any of my experiments are successful!
