I made an amazing pizza tonight. I used my (newish) usual crust recipe, and because we were out of pre-made sauce, I also made my own sauce.

Holy. Crap. It was so delicious! Probably one of the best pizzas, if not the best, I’ve ever made.

Except they're made differently with different ingredients, but apart from that they're exactly the same.

(Of course in other parts of the world e.g. NZ, Australia, UK, a flan is a fruit tart not a creme caramel)

Yup, panna cotta uses gelatin to maintain its shape, flan doesn't.

Made a pork tenderloin using a cocoa-and-chili rub, and a tart cherry sauce to go with it. Superb! Salad and cheddar biscuits on the side.

I made chicken tonight. Cooked a couple of cutlets in a pan, then pulled them out. Added a clove of garlic and a couple handfuls of spinach, cooked until wilted, then put that on top of the chicken along with some shredded mozzarella. Then into the oven just to melt the cheese.

To go with, I made a salad of brown rice, red pepper, toasted pecans, green olives, feta cheese, and chopped spinach, with an olive oil-lemon juice dressing.

Dinner ended up being rather late though. I started off needing cooked rice for the salad, so I got the rice cooker out, added the rice, added the water, and plugged it in. 30 minutes later I went to check on it…and discovered that I’d neglected to actually flip the switch to turn the thing on. I’m an idiot sometimes.

Using up leftover pork tenderloin, I made pork fried rice one night and potato-pork hash another night.

^^^ That's what MrsCO would have if I didn't cook! :lol:

Tried a new pasta sauce recipe (red sauce) that called for a bit of dark chocolate to go in. Was very good. Nice rich color, smooth texture, and just a hint of bitterness.

^^I’ve had popcorn and beer for dinner more times than I care to admit.

Today husband decided to use his new bbq to smoke a brisket. I made potato salad and coleslaw to go with. The brisket came out pretty good this time, bit dry on the bottom but nice and tender. Pretty good for a first attempt at making one on this bbq.

Made an excellent breakfast. Started with something that was similar to Thanksgiving stuffing/dressing, but with tomatoes and cheese mixed in, then near the end of the bake time, cracked eggs on top and finished those in the oven.

It was fantastic. Going into the regular rotation.
