I made really good breakfast burritos this morning. I added hash browns (I just used premade frozen ones), eggs scrambled with sautéed onion and peppers, salsa, and avocado.

They came out really good, husband really liked them too.

Beef barbacoa tonight, served with all the usual accompaniments: cilantro-lime rice, corn salsa, and guacamole, all homemade. One of husband’s favourite meals, and one of mine too!

I made pub cheese spread earlier, and that has to sit a few days to get really good, so we had that yesterday with a big pile of salami, veggies, and crackers.

Husband made dinner tonight, so we had rotisserie pork roast, loaded baked potatoes, and steamed asparagus.

I made pizza again tonight - it came out really good again. I think I've found our favourite crust recipe, this is the one I'll be using from now on.

Vegan roasted red pepper cream sauce, served over rotini with some asparagus and peas thrown in there. Trying to use up some various bits and bobs from the fridge.

Thanks to the whole double-grocery-delivery debacle (I posted about it on the first world problems thread), I have a whole lot of milk that we need to do something with before it goess off in like 2 days.

So a couple days ago I made an easy blender chocolate mousse, and yesterday for dinner I made mac and cheese with shredded Brussels sprouts and bacon (used plenty of milk in the sauce). Tonight I made chicken “parmesan” (we’re out of parmesan so it was really just breaded chicken with tomato sauce and mozzarella) with a creamy tomato sauce.

Anyone got any other brilliant ideas for something I can make that uses lots of milk? I’m thinking maybe ice cream next.

Cream soups can use a lot of milk, and can be frozen, too.

^^Thanks for the suggestions! I have frozen milk in the past, but husband wanted to use it up (plus freezing milk can sometimes be tricky because it comes in bags here [yes really, it’s a Canadian thing]).

I made panna cotta, that used up most of it. I also made a coffee syrup to serve with. Currently waiting for it to finish setting.

Hope it turns out good! Husband used to make panna cotta a lot when we were first married, but it’s my first time making it.
