Chicken piccata tonight! Old standby favourite. I served it over brown rice with green beans on the side.

We have a local (Dayton, Ohio) pizza chain that I love. Their pizza is a cracker crust style, and after tweaking an online copycat recipe, I finally got it just about perfect. I made one just like I order it - pepperoni, banana peppers, and black olives (those cheap little canned salad olives).

That was the night before last. Last night, I cooked down some onions in beer, caramelized those, then grilled some marble rye bread slices, spread on some sweet & spicy mustard, grilled some brat patties, topped those with butter cheese, and finished with the onion. Easy and delicious.

Pasta with meat sauce. I had a craving and this definitely satisfied it.

Last night's meal was nice. Started with a refreshing salad of radishes, cukes, and green onions mixed with sour cream, and then I made "Tuscan-style" pork ribs - rubbed down with a mix of oil, fennel, fresh rosemary, thyme, and sage, paprika, salt and pepper, and probably a few things I'm forgetting, left overnight, the baked in a low and slow oven, and brushed with balsamic vinegar at the end.

Buttermilk-garlic mashed potatoes on the side.

I made burritos last night, and purchased some mild "chili lime" salsa for them. Sweet Jesus. If that is their "mild" version, I must make sure I never mistakenly purchase the medium, or hot ones.

^^Funny how the definition of “mild” and “hot” can vary so much between products. I wonder why it isn’t standardized by scoville units.

I made pizza again tonight. I hadn’t fed my sourdough starter, so I ended up making crust with dry active yeast instead. The pizza looked so pretty coming out of the oven I had to take a picture, and I must say, it was one of the best pizzas I’ve ever made. Husband kept going on and on about how good it was.

Pizza looks good but I know it probably has onions on it. It also has black olives, which I'm fine with but if I ever wanted to make a pizza that Mrs. LP wouldn't eat, I'd put black olives on it.
