We had bagel BELTs using the bagels I made this morning, which turned out pretty good! They’re a bit chewy, but not bad at all for a first attempt. I’ll try toasting one tomorrow and see if that helps to crisp up the exterior a bit.

Eggs en cocotte and fried mashed potato cakes. The egg dishes were filled with scallions, bell pepper, cheddar, and creme fraiche.

Marinated some cut up chicken thighs in garlic, lemon juice and olive oil, the threaded them onto skewers and grilled them on the George Foreman. Served over rice with homemade tzatziki (grew the cucumber and mint in the garden) and watermelon salad (watermelon, red onion, lime juice, feta cheese, black olives, and more mint from the garden).

Really hit the spot for me tonight.

^^^ Do you grow your mint in pots or in the ground? I planted some last year, in the ground, and it quickly took over the herb garden, so I pulled it all up, but it came back this year, though much more manageable.

Frozen pizza and salad with homegrown (not mine) tomatoes and cukes and homemade salad dressing.

^^I grow my mint in pots for precisely that reason - if you put it in the ground, it will try to take over the world. My grandma told me she once sunk a pot into the ground and planted her mint in there, and it split the pot in half and ran riot regardless!

I used to have issues with my potted mint not surviving the winter, but last year I moved the pots to a sheltered location (next to my garage, underneath my stacked patio chairs) for the winter and they lived. I grow 2 different kinds, regular peppermint and chocolate mint (which I want to use to make ice cream this summer).

Last night I made a summer favourite of mine, pasta with lemon and zucchini.

^^^ Last year, my hardy stuff, like rosemary, didn't survive, but my chives and oregano and sage, and thyme did, and now they're exploding as well. I've been drying herbs like mad, trying to keep up.

Sunday, I was on a roll in the kitchen: ham and cheese impossible pie for breakfast, strawberries in a balsamic-basil dressing and peach wine for our midday snack, and beef tenderloin steaks with herb butter and a tomato-cucumber salad on the side.

Last night was just a big salad.

Poached egg on an English muffin, with ham and two kinds of cheeses. Side salad and sautéed potatoes as well.
