I cleaned up and organized the cupboards. I found 2 containers of arborio rice, so I made risotto and salmon since I have all the time in the world to cook.

^^^ I've never made risotto, but many people swear it's the best dish in the world. It was Vincent Price's favorite meal.

^^It is quite delicious. It's a bit labor intensive, but not difficult. It's a matter of stirring constantly adding the liquid as it absorbs. I don't do anything too fancy. I keep it pretty simple.

I rolled out some frozen puff pastry and made, bacon-tomato-cheese turnovers.

Sausage, egg, and cheese English muffin sandwiches this morning.

^^My husband likes making risotto. He likes to make it in the pressure cooker - I don’t know how the science works, but when you make risotto in the pressure cooker, it turns out creamy and the rice is tender without all the stirring. It’s kind of magic.

The only chicken they had available at the grocery store when husband went was leg quarters, so I’m making a dead-easy chicken and rice casserole. Take two cans of cream soup, whisk together with some milk. Add rice. Pour that onto the bottom of a casserole dish, then put the chicken legs on top, and sprinkle the whole thing with some onion soup mix. Lowbrow food, but still tasty. I will probably save the bones for making stock.

The longest part of the prep was removing the skin from the chicken.

Baked potatoes. Mine had cheese and the leftover sloppy joe meat, and I made MrsCO a spinach-mushroom-onion-garlic-wine-cream topping for hers (also with cheese).

Buttermilk pancakes this morning.
