I made banana chocolate chip baked oatmeal this morning, topped with a spoonful of coconut yogurt.

Yet another study has come out on where most of the greenhouse gas emissions from food come from, and they’re mostly from production, not transport. That means that the most eco-friendly diets are plant-based, so I’m redoubling my efforts to make most of my food plant-based. Today’s breakfast was mostly-vegan - I think the chocolate chips I used had dairy in them, but I’m not going to let the perfect be the enemy of the good with this. I have no intention of completely giving up meat, dairy, or eggs, but I think cutting back is still going to be good for the environment and my health.

Super Bowl was yesterday. In my family we have a tradition that in our little family betting pool, the prize is (besides bragging rights) you get to choose what we eat on Super Bowl Sunday. 99% of the time, the winner chooses some form of takeout; husband won this year, and he decided that he wanted homemade food. So I had to cook.

I made cilantro-lime rice, barbacoa beef, homemade corn salsa and homemade guacamole, so everyone could make their own burrito bowl. It was a lot of work, but really delicious. My parents made potato skins for an appetizer, and lemon sponge pudding and brownies for dessert. It was all really tasty.

We totally forgot about the Super Bowl. :lol:

Last night, I used the leftover vegetarian chili to make sheet pan nachos.

I made vegan brown sushi rice bowls last night. I made up some sushi rice, then coated some soft tofu in a cornstarch/cornmeal mixture and fried it in a pan with a bit of oil. Layered that in bowls with some chopped cucumber, radishes, avocado, chopped scallions, and added a citrus sauce (lime/orange, with some ginger too).

They were really, really good. Even husband liked them - he liked the crispy exterior/soft interior on the tofu (he's normally not a big fan of tofu, says it reminds him of a sponge). I'll see if I can make tofu like this to add to other dishes.

Last night, we had corned beef and cabbage wontons with roasted potatoes. Tonight, beef burgundy done in the crockpot. YUUUUUUM!
