We’re getting a delivery of a split side of beef on August 12. Consequently, we’re trying to eat all of the beef that’s in the freezer, so we can defrost it before we get the next beef delivered.

Dug through the freezer last night, and discovered that we had some tenderloin steaks in there still. So husband cooked them tonight, with horseradish mashed potatoes and Brussels sprouts. The steaks came out so tender and delicious!

Right now I’m also thawing a brisket for husband to cook tomorrow.

Husband thawed out one of the briskets we had in the freezer. After lunch, he popped it in the (toaster) oven. Went to have a nap (we went on a bike ride this morning and it almost killed him...whoops!). After an hour, he wakes up and goes to check on the brisket. He used the thermometer and immediately starts cursing that the damn thing’s overdone already. It was at the internal temperature for well done, but still very tough. Also it was 2 pm. Husband gets very frustrated when something he’s cooking doesn’t work out, but after some cajoling, I convinced him to try sticking the brisket in the slow cooker with some liquid to see if that might tenderize it a bit.

So that’s where the brisket’s been for the last 4 hours - in the slow cooker covered in beef broth. It might still turn out terrible, but I’ve got coleslaw and corn on the cob as sides, so at least we won’t starve.

^^^ That's too bad. Wish I could say I've never overcooked brisket, but...

Pasta tossed with chicken and tomatoes left over from yesterday's salad.

I made a vegan pasta salad from Thug Kitchen. Spaghetti, mango, radishes, cucumber, mint and basil (both from the garden) tossed with a homemade dressing. The dressing was mango, sesame oil, rice vinegar, chili-garlic paste, ginger, and soy sauce. I really liked it; husband not so much.

Of course, the day I decide to make nice cold pasta salad is also the day the heat wave broke. Ah well, it’s still pasta salad weather as far as I’m concerned.
