^^What makes the potatoes Greek? My friend has 50 lbs of potatoes (long story...) so she gave a bunch to me. Greek roasted potatoes sound like a good way to use them, how do you make them?

Tonight we just had burgers, but they came out really good today. To the ground meat, I added onion, some breadcrumbs and an egg (to bind it together), some ground coffee and bbq sauce. Really hit the spot, they were so yummy!

^^^ They're just tossed in a lemony oil mixture, roasted in the oven, then sprinkled with feta cheese at the end. Here's the recipe:

Tonight husband is making one of his specialties, stuffed peppers. We only have these about once a year because the shepherd peppers he uses have such a short season.

Butter chicken with homemade sourdough naan. I used the tomato sauce I made the other day in the chicken, I think it added a nice touch - it was a little spicier than I anticipated though!

I made 3-cheese tortellini with a tomato cream sauce. (The tortellini was purchased but the tomato sauce was homemade). It came out good, although the sauce was a bit runny.

For lunch, I made a nice salad with wheat berries, roasted beets, olives, spinach, and walnuts with a citrusy dressing. Fantastic topped with a bit of goat cheese.

I suppose I’ll have to make the switchover from warm-weather salads to soups soon, as it’s now starting to look a little bit more like fall here.

I'm looking forward to all the cold-weather dishes coming up. Beef stew...chili...pork roast...beef burgundy...YUM!

Last night husband made stuffed peppers again, since shepherd peppers were still availsble when he went to the store last week.

Tonight I made sourdough crust pizza, which is quickly becoming one of my go-tos as long as I have mozzarella cheese on hand. Topped with pizza sauce, mozza, onions, red pepper, olives, tomatoes, and finished off with a sprinkle of Parmesan.

A member of the equestrian community here recently died at 14 years old in a bit of a freak accident. I didn’t know her personally, but a barnmate of mine is collecting frozen meals to take to the family. So today I made slow cooker coconut curry to freeze for them. Super easy - just toss everything in the slow cooker and let it do its thing.

Husband is making pad Thai for dinner tonight.
