^^^ I used Ina Garten's recipe, and the prep is simple:
Salt and pepper inside
Stuff it with lemon halves
Stuff in a full garlic head cut in half
Stuff in a bunch of fresh thyme
Brush with melted butter, then salt and pepper
Rough cut veggies, toss in oil and salt and pepper, throw it all in the pan, set the chicken on top, then roast for 90 minutes.
I hate handling chicken, so I touch the chicken, wash my hands, touch the chicken again, wash my hands, etc. it's always bothered me that, when watching cooking shows, they'll wrestle with a raw chicken, then grab ahold of the paper towel dispenser, or the pepper grinder, and not worry about getting chicken slime everywhere.
