I recently baked a triple berry pie https://www.allrecipes.com/recipe/12384 ... berry-pie/ (using Pillsbury crust because I'll make an effort but not *that* much) subbing blackberries for blueberries because they're in season and amazing. Also added some butter to the filling and brushed the crust with egg, and let cool in the cooling oven to help the filling set a bit more. By the end of the night the whole pie was gone and I was scraping out the pan with a spoon. Sooooo good.

Brownies (from scratch). Very gooey in the middle, which is a nice way of saying these are a bit underbaked.

My parents and brother are coming over for dinner tonight, so I made this chocolate soufflé cake. Photo is fresh out of the oven: the centre totally collapsed when it cooled.

^^^ I hope you don't think you did something wrong because it collapsed. Soufflés, even when done exactly right, start to deflate as soon as they come out of the oven.

^I was a bit worried; the recipe said it would collapse “slightly”, but it deflated quite a bit. Anyway it was what I had to serve for dessert, so I dusted a bit of icing sugar on top and served it.

It was quite the hit; my mom loved it so much she was scraping the bottom of the springform pan with a spoon to get the last bits.

It probably could have used another couple minutes in the oven, but not bad for a first attempt.

One of my favourites today for breakfast (or brunch really, since I slept in quite a bit today): jam-filled muffins. I don’t keep a lot of different jams around the house, but I dug through the fridge and found a jar of homemade strawberry-lime (my fave), apricot, and lemon curd.

They came out really good, as usual. I’d never tried lemon curd it them before. It sort of absorbed into the muffin instead of staying as a pocket in the centre, but it made the muffin tasty lemony, so still good!

Later today I’ll probably feed my sourdough starter and then make bread tomorrow. I’m on vacation this week so should have lots of time to cook and bake.
