I made Mac and cheese for dinner tonight. No real recipe, just kind of made it up as I went along with ingredients that we happened to have on hand.
First I cooked some diced bacon and onions until crispy. Pulled those out, then made hot sauce breadcrumbs in the same pan: cubed some stale bread, toasted it in the pan, then poured over some hot sauce mixed with a bit of milk. Dumped those out of the pan, then added a bit of pasta cooking water just to deglaze the pan, and a can of condensed cream of broccoli soup. Added milk until the consistency looked right, tossed in a bit of dry mustard powder and black pepper, then added in the cheese and stirred until it melted. Added the cooked macaroni, bacon-onion mixture, and some frozen green peas, just because a vegetable seemed like a good idea.
Poured the whole thing into a casserole dish, topped it with the hot sauce breadcrumbs, and then let it bake for a bit.
It came out perfect! I love recipes like that, where you can just kinda play with it and see what happens. Husband said it was his favourite Mac and cheese ever.
